Calling the lover's body gold makes them something rare and worth having, desire turned into the language of treasure.

On Reputation's most boastful track the card-table verb turns back on the speaker: the partner has been 'callin' my bluff on all my usual tricks', so the practised hand of concealment is the thing being seen through. The bluff that elsewhere is her weapon is here called, and the truth she had been holding back is what follows.
“We do the most, I'm in the Ghost like I'm whippin' a boat”
The Rolls-Royce Ghost as the swagger of the reputation era; the car is pure status display, wealth worn as confidence.
“So here's the truth from my red lips”
Red lips as the colour of bold honesty: the red mouth delivers the confession, marking confidence here rather than seduction.
“And I can't let you go, your handprints on my soul”
Handprints-as-trace register, figurative mode, the hand's permanent mark transferred to the soul as the body's most internal surface; the partner's hands have left readable evidence on the speaker's most ungovernable interior. Companion to "Slut!" 's literal handprints (wet cement), the same gesture transposed from the public surface to the private one.
“And you understand the good and bad end up in the song”
The line belongs to Ed Sheeran's guest verse, not to the song's main speaker. It says that the good and the bad both end up in the songs, and it says so inside one, so the line names the practice while taking part in it.
The line treats that knowledge as something the person addressed already understands.
